This recipe is really yummy. Makes great leftovers and can be made in the morning and baked in the evening.
5 large potatoes, peeled and thinly sliced (this is when a mandolin comes in handy)
3 T butter or margarine
1/4 cup all-purpose flour
1 3/4 cups chicken broth
2 T mayonnaise
3/4 t salt
1/8 t pepper
Paprika
In a greased 2-1/2-qt baking dish, layer potatoes. In a saucepan, melt the butter; stir in four until smooth. Gradually add broth, mayonnaise, salt and pepper; cook and stir for 2 minutes or until thick and bubbly. Pour over potatoes. Sprinkle with paprika. Cover and bake at 325 degrees for 2 hours or until tender. Or set aside and bake later.

Thanks for posting this, Robin. I've never been able to make these. The potatoes are always too hard. I'll have to try your recipe.
