Last week Rebecca and I met with her preschool teacher. Mrs Teresa gave Rebecca homework to turn in on her first day next Tuesday. I didn't want Rebecca to get in the habit of doing her homework the night before so we completed the assignment yesterday. I am very proud of her. She is very excited to start school. I don't think it will be that easy for me. This is the first time that during her gymnastic class that I am not with her and I get all chocked up looking at her through the window. Benjamin's benefit is more one on one time with his mommy.

Creamy Black Bean Salsa Chicken
2 to 4 boneless, skinless chicken breasts
1 cup chicken broth
1 cup salsa
1 can (15 ounces) corn, drained
1 can (15 ounces) black beans, drained
1 package taco seasoning*
1/2 cup sour cream
1 cup grated cheese
Place chicken in greased slow cooker. Pour broth, salsa, corn, beans and taco seasoning over chicken. Cover and cook on low heat 6-8 hours or on high heat 3-4 hours. Remove chicken with slotted spoon and place on serving dish. Stir sour cream and cheese into sauce in slow cooker, then pour over chicken. Makes 3-5 servings.
I served this with green beans (from our garden yum), spanish rice and toasted tortillas with melted cheese on top.
*I forgot to buy and thought I had some taco seasoning but I didn't. I made my own by combining chili powder, garlic salt, cumin and ground coriander seed.

Here We Go
I have succumbed to peer pressure and started a blog. I am not sure what I am doing. I want to show my family and Chad's family our family. I am hoping I can share ideas, recipes and fun with everyone out there in "internet" land.
